Fall Non-Credit Culinary Series Courses Open to Public
Learn about Japanese cuisine, French wine, and the how to cook the perfect turkey

The culinary series courses for fall 2010 are:
Wednesday, Sept. 22, 6 – 8 p.m.: A Taste of France – French Wine Basics – This class will feature a liquid geography of France's wine regions: Alsace, Burgundy, Bordeaux, Rhone and Southern France. We will sample, compare, and learn about French wine culture. Never again be afraid to order from the French wine section! Class limited to 20. (1 class at the Brewster Inn, Cazenovia – fee is $55)
Saturday, Sept. 25, noon – 2:30 p.m.: Introduction to Sushi Making – This course will introduce students to traditional Japanese cuisine, etiquette, and the preparation of nigiri sushi and sashimi. Local master chef, Yusuke Honda, will demonstrate proper techniques and guide students through the preparation of sushi. Each student will make their own sushi with all materials supplied. Class limited to 25. (1 class at the Kyoko Japanese Restaurant, Fayetteville – fee is $65)
Saturday, Oct. 23, noon – 2:30 p.m.: Intermediate Sushi Making – Learn how to make sushi at home with Japanese Master Chef Yusuke Honda. This intermediate course will cover how to select and slice fish and actual sushi rice preparation. Class includes instruction, demonstration, and preparation of nigiri sushi, futomaki sushi, inari sushi, and ebi. No prior sushi making class is required. Students will make their own sushi with all materials supplied. Class limited to 25. (1 class at the Kyoko Japanese Restaurant, Fayetteville – fee is $65)
Saturday, Nov. 6, noon – 2 p.m.: How to Prepare a Perfect Turkey – Let the Brewster Inn's master chefs teach you their secrets to perfectly preparing and cooking (roasting and deep frying) your next turkey. Everything you will need to know to be an expert in your own kitchen. (1 class at the Brewster Inn, Cazenovia – fee is $55)
Saturday, Nov. 20, noon – 3 p.m.: Advanced Sushi Making & Japanese Cuisine – Master Chef Yusuke Honda will provide instruction, demonstration, and preparation of Gomoku Chiashi and Maguro Zuke plus advanced fish cutting techniques. Pickling and salting fish, sake selection and a traditional Japanese Tea ceremony. No prior sushi making class is required. Students will make their own sushi, with all materials supplied. Class limited to 25. (1 class at the Kyoko Japanese Restaurant, Fayetteville – fee is $75)
